For those of you making 5x7 composites this year, I've come up with some baseline settings for you too. Keep in mind that composites are subjective, and these settings are meant as a starting point- you may want to make changes once you get started.
Page Tab: 5x7 Landscape
.125 margins on all sides

Sort Tab: Users Choice

Names Tab: 2 Line Name
Use Maximum Space for Names
22% White Space for Names
Font Size 14
Scale Font Size to fit

Background: User Choice

Images Tab: Mask or Frame of User's Choice
3% White Space Horizontal
3% White Space Vertical

TitleBlock Tab: Template of Users Choice
2 Cells Horizontal , 1 Cell Vertical
